Seriously delicious caramel

There are things that we love and we hardly ever do them. Like with exercises, after 30 minutes we feel endorphins and it makes us happy. We know it, we remember about it and we don’t do it. The same is with cakes - it is extremely nice to make the batter and to bake, then to decorate. We use good ingredients, can make it healthier and it’s delicious. So now you know, you have to exercise and bake! You should also try to make a caramel. Do you love caramel on your bread? Of course you do and If you say you don’t, it means that you don’t know what you want and you should trust me on this one :D. I personally love caramel and I always wanted to do it, but through 37 years of my life it did not happen. Thankfully, it’s the end of the year and 2017th was all about trying things and living a full life. I did it, I finally tried to make caramel. It did not work out the first time, because sometimes things don’t work out. I did the second time.

There are things I do understand now about caramel:

1. You cannot really measure it with time, you have to look at it and stir it. You may have a gas stove and I have one on electricity and it’s just not the same. It may be more humid in your area or much hotter. It all has an influence. So just watch your caramel.

2. Never taste it before adding cream! I did it, it was a huge mistake, it glues to your lips and tongue and burns it. We are mostly adults here, so please learn on my mistakes.

3. You have no idea how much you want to make it. I know that this is a pure sugar with a tiny bit of water and cream. It is not healthy or low in calories, but it will make you happy. It’s this guilty pleasure you can have from time to time.

You will need for one jar:

  • 1 & ½ cup sugar
  • ½ cup water
  • big pinch of sea salt
  • 1 cup creme fraiche

Take a pot, thick one, and place sugar, salt and water inside. Start to boil on a higher temperature. And now, remember to mix constantly until it starts to boil.

Then let it boil for about 20-30 minutes without mixing. Just look at it. You want Sudan to caramelise so to burn a bit. The watery mixture should become slightly brownish. Shake the pot from time to time, so it won’t burn only in the middle.

Add cream and start to mix it in. There will appear some foam, it’s ok. It will disappear while you mix it. Right there, in front of your eyes the caramel will appear.

Move it into a jar and try to hide really well. If you have a family or a partner, they will eat it. Once again, learn on my mistakes. Hide it!
