Watermelon Mint & Lychee Mojitos


Phew! We went from the longest winter right into summer! Now that we've settled quite a bit with our move and I've situated the kitchen with my plethora of tools, it's been great getting back into the swing of things cooking regularly, meal planning and enjoying the time with my boys. I've been struggling to find a balance between work at the pharmacy, teaching classes on weekends, having a social/personal life with family and friends and keeping up with sharing here... but I'm finally getting a routine down. It's so much easier having the Baron be so supportive and Joel working with me in the kitchen and even around the house with chores! That said, life has been great and I'm excited about the summer ahead. Lots of great things are on the horizon and I can't wait to share as things move forward! So with that, let's have a drink... and this Watermelon Mint & Lychee Mojito is the perfect glass to raise up!...
With the hot weather we've been having, I needed to quench my thirst with something refreshing and slightly sweet. Watermelon is on sale these days and nothing pairs better with it than mint. I've had some great cocktails with watermelon and mint in the past, but I felt it could incorporate something else. Looking into my pantry, I found some lychee juice {kind of random, but not all that ordinary in my multi-ethnic cupboards and pantry}. The lychee juice is something you can find at most supermarkets within the Asian aisle or any Asian grocery or market. They are canned, much like the latin fruit nectars. If you can't find it, look for canned lychees in heavy syrup. You can use the heavy syrup along with some pureed lychees in place of the simple syrup and lychee juice in the recipe - just use the same amounts. The result is a refreshing drink perfect for the summer. It's cool, refreshing and they're great for a crowd when made in a pitcher!
Watermelon Mint & Lychee Mojitos recipe adapted from CD Kitchen
3/4 cup loosely packed mint leaves
1/2 cup freshly squeezed lime juice
1/2 cup pureed watermelon
1/2 cup lychee juice
2/3 cup simple syrup
1 1/2 cup rum
3 cups club soda
ice

Place the mint in a large serving pitcher. Using a mortar and pestle, mash up or "muddle" the mint leaves. If you don't have a mortar and pestle, you can use the back of a spoon to mash up the mint leaves.
Fill the bottom 1/4 to 1/3 of the pitcher with ice. Add the remaining ingredients and stir well to combine. Fill the remainder of the pitcher with ice and serve cocktails on the rocks.
