How fun is it that Easter falls on April 1st this year?! It’s Easter and April Fool’s Day combined into one and I think there are opportunities that can’t be missed.

Many families like to participate in April Fool’s day fun and even hold yearly contests of “out-pranking” each other. Easter is a whole new theme to be explored when it comes to pranks. I’ve heard some parents talk about prank Easter Egg Hunts, where the eggs would be empty of filled with food kids hate. I think that could be hilarious with some older kids but little kids might get quite heartbroken to spend all that time finding eggs just to find them empty or filled with broccoli. Maybe if there was a grand prize involved at the end, so that the empty eggs won’t feels so disappointing.

If I had teenage kids, I would totally make a prank egg hunt. I would come up with some hard riddles that take them a long time to solve and then lead them to a prank prize. After everyone is done laughing (and laughing, and laughing), I would have a real prize for them though.

Since my son is still young and would be quite heartbroken to find broccoli in his Easter eggs, I need to come up with an harmless prank that would make him laugh. I’m thinking something that jumps out at him, he would find that hilarious. I’ll have to put hubs on the project of rigging the eggs to have something pop out as little man open them.

Besides the egg hunt pranks, food pranks are quite funny too. I’ve seen cupcakes that are actually made with savory food, doughnuts that are actually apples, cinnamon buns that are actually pulled pork buns, and many more. I’ve spent over an hours looking though prank ideas on Pinterest and laughing my butt of at some of them. There is one prank I really want to pull on my husband, where you put a $20 bill in the toilet and saran wrap it. Besides that, I need to come up with a good food prank that he and little man will fall for.

Jalapeno Cheddar Egg Salad

  • 12 hard boiled eggs
  • 3 jalapeno peppers (seeded)
  • 1 1/4 cup shredded sharp cheddar cheese
  • salt
  • 2 tbsp sour cream
  • 1/3 cup mayo ((1/2 cup if you like it creamier))

Optional:

  • 1/2 tsp chipotle chili powder

  1. Peel and dice hard boiled eggs. Add them to a large mixing bowl.

  2. Seed and dice jalapenos and add them to the bowl with eggs.

  3. Add cheddar cheese and salt. Gently mix until everything is evenly incorporated.
    (If you want to add a little more spice to the egg salad, add some chipotle chili powder.)

  4. Add mayo and sour cream. Gently mix until all evenly combined.

  5. Store in the refrigerator in an air-tight container.
