Coal Breakfast Cookies

Christmas breakfast is served.

How fun and festive…and yet somber because it’s coal from Santa and not, let’s say, that milk frother

you’ve been pining (and pinning) for.

So this weekend while making a DIY Christmas gift for my big sister I managed to take a chunk out of my pinky finger. I’m typing this post up with 9 fingers instead of 10. I mean, the finger is still attached it’s just inoperable at the moment. After a cut I typically call my mom and ask the question, “how bad is bad?” And then I proceed to describe the cut. I’m accident prone around the holidays. Like 4 Christmases ago I was playing a heated game of ping pong and ended up busting my head open and had to get staples.

I think the finger may need stitches, but I’m getting a hair cut tomorrow and I don’t have time for both.

But it’s okay, I knew I didn’t have a career as a hand model anyways. My skin is far too pinky. Whenever I edit food pictures that involve my hands I always have to scale the red tones way down.

How was your last weekend before Christmas?

Did you go ice skating? We didn’t.

I spent about 2 hours Saturday trying to convince Andrew to go but he says “why would anyone attach small hatchets to children’s feet and let them run around?!”

True.

But holiday cheer (i.e. hot chocolate) usually takes away my fear of being cut by a blade-wearing small child. In the end we watched 4 Christmas movies (Christmas Vacation, Elf, The Grinch, Home Alone) and called it a day. I wish some gingerbread house making would have been involved…but I’ll take what I can get.

Have you made gingerbread houses this season? I still just can’t even over these.

And since lumps of coal for breakfast may not be the most loving way to welcome Christmas guests, you should definitely serve them alongside a mini gingerbread house garnished hot beverage.

Or you could crumble the ‘coal’ over bowls of creamy greek yogurt or equally creamy oatmeal.

All are acceptable festive options.

Ingredients
  1. 1 1/2 cup oat flour (spooned into measuring cup)
  2. 2/3 cup old-fashioned oats
  3. 2/3 cup special dark cocoa powder
  4. 1/4 cup granulated sugar
  5. 2 tablespoons ground flaxseed
  6. 1 1/2 teaspoon baking soda
  7. 1 teaspoon salt
  8. 1 egg
  9. 1/3 cup unsweetened applesauce
  10. 1/4 cup nut butter (I used almond butter)
  11. 1/4 cup butter, melted
  12. 1/3 cup dark chocolate chips

Instructions
  1. Preheat oven to 350ºF. In a bowl, combine oat flour, oats, cocoa powder, sugar, flaxseed, baking soda and salt. Add in egg, applesauce, nut butter and melted butter. Combine until a dough is formed. Add in chocolate chips. On a greased baking sheet, use a retractable ice cream scooper to make 16 cookies. Bake for 10 minutes.

Makes 16 cookies

    1. I highly recommend using an ice cream scooper for these...otherwise they get too dry and dense.
